So yesterday was a rough day with the kiddos and I barely even got the bread done….but I wanted to re-do the honey flax seed bread I made on day 1. I am going to keep going on a bread machine kick here for a week or two. Maybe through the rest of November. December will be all about cookies, I can’t say the man or kids will complain about that! Anyways I tweaked the recipe to include half a cup of Muesli, which I added at the 30 minute add ingredient beep, I also added an additional 1/4 cup slightly ground flaxseed. I will re-post the recipe below with the new tweaks! It turned out amazing! We can’t stop eating it! I am going to have to start making 2 loafs a day!
Whole Wheat Honey Flax Seed Bread
Ingredients:
9oz warm water
2Tbsp Olive Oil, I would use coconut oil if I wasn’t completely out
1/4 cup honey
2 cups whole wheat flour
1 cup white flour (I used white bread flour)
1/4 cup ground flax
1 tsp salt
1 1/2 tsp yeast
* 1/2 Cup Muesli (I use Bob’s Red Mill)
1/2 cup lightly ground flax seed (Also Bob’s Red Mill)
Add all ingredients in order listed, except the muesli and additional flax seed.
Set bread machine to a basic bread cycle, select your crust, and hit start. Once it beeps, or when it is time, add the additional flax seed and the muesli.
Then 2 hours and some odd minutes later your bread is all done for you to enjoy!
